What do you know about the Blue Cardinal?

The name blue cardinal is a reference to the myth in the southern Appalachian mountains of people who spot the usual bright red bird but sporting all blue feather with red tint. There have been multiple reported spottings but never have been confirmed. Food surrounds us, but we don’t always think about where it comes from or how it got to us. The way we eat and our experiences with food have huge impact on everything from the environment to our health.

Blue Cardinal is the creation from Chef and founder Cameron Kozlow. Cameron started as a dishwasher in a fine dining restaurant in Blowing Rock, NC and worked his way up to the position of executive chef over the course of three years. Working in many different styles of restaurants over the 16 years of his culinary journey, he found his passion in the mountains cooking southern Appalachian cuisine. Moving to Asheville to help his friends with their food truck, Bun Intended, who went on to win people's choice award in 2018 and best overall food truck of WNC in 2019.
